His Highness Sheikh Mohammed Bin Rashid Al Maktoum’s visit to Emirates Flight Catering

Our facilities have the capacity to produce an average of 220,000 meals per day and we take pride in the in-flight catering, hospitality and support services provided to Emirates Airlines, First and Business Class lounges as well as over 120 international airlines operating through Dubai International Airport. Our facility is extensive and we were able to showcase some of our world class processes and accomplishments. 

We achieved some great milestones last year with the opening of our Central Commissary Unit (CCU) and Skybake, therefore, this is where the tour began. Our CEO, Saeed Mohammed, ensured that His Highness got to see the new state-of-the-art facilities. CCU is responsible for 15 tons of vegetables, 9 tons of fruit and 30 tons of meat, which are distributed to all areas of our facility on a daily basis. We have also recently introduced new products created in-house in CCU; ice-cream and pasta. Skybake, our bakery, with a usage of 3,300 tons of flour per year, produces 97 variations of product and distributes 450,000 items per day. 

The tour continued through to our main production areas and His Highness was witness to our automated overhead cart transport system (monorail) in action. There are 2.55 km of monorail lines and over 29,142 meal carts and 25,174 standard unit containers handled each day. The system is designed to transport our carts and containers across our operational areas to the dishwashing area where 2.7 million pieces of cutlery and crockery are washed each day, sometimes peaking at 3.5 million per day over the weekend.

His Highness was shown our assembly area, the mezza plating in our cold kitchen and the selection of artisan desserts in our pastry area, where we have a team of over 520 exceptionally talented chefs who oversee our extensive production lines and specialty kitchens, preparing 1,548 different menus per year. 

Throughout the tour, His Highness was very interested in our food hygiene and quality practices and the dedication of our employees, along with the innovative and state-of-the-art equipment that we have throughout our facility.
